Drink of the Day: 3 (Drink Like You’re in the Islands, Mon)

St. JohnI haven’t posted a new drink recipe in a while, I know. So, inspired by a recent jaunt in the Caribbean, here’s a sampling of some of my favorites. Oh, and one non-alcoholic punch at the end for all you non-drinkers (and the rest of you can feel free to add some rum to that one.) Enjoy!

The Soggy Dollar Bar in St. John claims to have invented the following drink. Their recipe contains dark Rum, Cream of Coconut, Pineapple and Orange Juice, topped with fresh grated nutmeg. Of course, they keep their exact recipe a secret. Here’s a decent substitute:

Painkiller Recipe

2 oz. dark rum (Pusser’s, Cruzan Dark are nice)

1 oz. cream of coconut (Coco Lopez works great)

4 oz. pineapple juice

1 oz. orange juice

nutmeg

Instructions: Shake it up and pour over ice. Grate (okay, or shake) nutmeg over the top.

This next one is oh-so-easy and a good twist on a rum and coke:

Yo! Ho! Ho! Rum Recipe

10 oz. good root beer (some island bars make their own, here’s a link to a homemade root beer video)

2 oz. spiced rum

Instructions: Just pour over ice and shake or stir. Delicious!!

I don’t personally like the following drink, but a lot of other folks do. It’s “Bermuda’s National Drink”:

2 oz rum (Gosling Black Seal for authenticity)

3 oz ginger beer (Barritts?)

Instructions: Pour over ice in highball glass and garnish with lime if desired. Note: Apparently, Bundaberg Rum Co. makes a pre-mix version if you’re ever in Australia.

This next drink is everywhere in the islands. Including when you exit a plane at the airport.

Rum Punch Recipe

1 part light rum (Cruzan)

2 parts pineapple juice

2 parts grapefruit juice

Grenadine- just a splash

And finally. My no-fail, best ever, personal non-alcoholic punch recipe, which I recently made for a party and it went like hotcakes. I actually adapted it from this recipe at AllRecipes.com.

Silversprung’s Hands-Down Greatest Alcohol-Optional Punch

1 cup white sugar

6 cups water

2 (3 oz.) boxes of strawberry Jello

46 oz. pineapple juice

1 quart OJ

2 (2 liter) bottles of Sprite

2 (1 gallon) Ziplock bags

*light rum (optional)

Instructions: The night before your party, put water, sugar and Jello in a giant pasta pot on the stove and set to med high, uncovered. Mark when it begins to boil, and let the mixture boil for three minutes. Turn off the heat and mix in everything else BUT the Sprite. When you’re done mixing, take a gallon Ziplock bag and open it inside a bowl (so it stands up on its own and doesn’t fall over.) Pour in about half of your punch and seal. Do the same with the remaining half and freeze overnight.

About a half hour before your guests arrive, take one baggie out to thaw. Upon arrival, put your thawed bag of punch in the bowl and mix with one bottle of Sprite. Garnish with orange slices and cherries. Repeat with second half of punch when you start to run low.

*If adding rum, pour this to taste after you’ve mixed up a batch with the Sprite.
